Once you have mixed the dough using your own favourite recipe, you place a ball of dough in the centre of the press, close the lid and apply pressure to the lever to flatten.

You may wish to use waxed or baking paper to release the dough more easily from the press. Remove the pressed tortilla and cook on a grill or skillet according to your recipe.
